Ingredients & How to Make It
Ingredients
Method
1. Mix turmeric into about three cups of hot water. Dip the paneer slices in the turmeric water for 3 to 4 minutes, then remove them.
2. Heat mustard oil in a large pan and shallow fry the paneer until golden brown.
3. In another pan, heat some oil and add the tomatoes. Add 1 tablespoon of red chilli powder and 1 teaspoon of ginger powder.
4. Stir in salt, cover and cook for around 5 minutes, until the tomatoes soften and the oil begins to separate.
5. Add mutton stock/water, turmeric, green cardamom, cinnamon sticks and shallot paste. Let the stock reduce.
6. Add food colouring if desired.
7. Add the fried paneer and simmer on a low flame for 8 to 10 minutes, until the gravy reaches your preferred consistency.
8. Finish with zeera, cover and let it rest for 15 minutes before serving.
